Last night my friend, Heather, slept over and we have been spending the entire day together because it's February break and no one is home all day with either one of us so we thought why be bored separately in our own homes when we could be bored together at my house? Thus, leading us to a twenty four hours hang out sesh in which we have so far:
1. Slept.
2. Watched "Seventeen Again" (Oh my god, I love Zach Efron and I'm not embarrassed to admit it anymore. He is beautiful. Especially on "Ellen" yesterday. Oh my god, I can't even, I can't...)
2. Watched "The Breakfast Club".
3. Made a delicious pancake breakfast.
4. Went on a long dog walk around the lake.
5. Sat and stared.
6. Decided that I should just bake something because it was inevitable.
So here we are, with my new creation. Butterscotch (per Heather's request) and granola (per my curiosity) cookies. I wasn't sure if they were going to taste any different from Oatmeal Scotchies (which are great, by the way) but the texture is definitely different. The contrast between the oats and granola is quite satisfying, along with the soft butterscotch chips. If I were Rachel Ray, then I would say "YUM-O" but I'm not, so I think that I will just hold off. ;)
Ingredients:
2 sticks of unsalted butter, softened
3/4 cup of sugar
1 1/4 cups of brown sugar, packed
3 eggs
1 teaspoon of vanilla
1/2 teaspoon of salt
2 cups of flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1 cup of oats
2 1/2 cups of granola
1 bag of butterscotch chips
Steps:
1. Cream the butter and sugar until smooth.
2. Beat in the eggs, vanilla and salt until the mixture becomes fluffy.
3. Add the flour and leavening agents.
3. Mix in the oats, granola and butterscotch chips.
4. Bake in a 375 degree oven for about 14 minutes (If you make the dough balls roughly the size of golf balls).
