Mine and Becca's friend Sammy turned sixteen yesterday so we decided the make her some cookies to celebrate! Sammy, the birthday girl, does not like peanut butter (Weird, I know.) so naturally while brainstorming what to make her, all I could think of was peanut butter fudge, peanut butter brownies, peanut butter cookies, peanut butter, peanut butter, PEANUT BUTTER!! It was frustrating to say the least.
Finally after some serious internal struggle, we came up with these delightful little gems! They consist of a simple oatmeal cookie base with lots of M&M's and Heath toffee bits!! If I were Rachel Ray I would say "De-lish!" right now, but I'm not, so I think I will hold off.
Ingredients:
2 sticks of unsalted butter, softened
3/4 cups of sugar
3/4 cups of packed brown sugar
2 eggs
2 teaspoons of vanilla
1 teaspoon of salt
1 1/2 cups of flour
1 teaspoon of baking soda
3 cups of oats
2 cups of M&M's (To be quite honest we probably used more than that...)
1 package of Heath toffee bits
Steps:
1. Cream the butter and sugars together until light yellow and fluffy.
2. Add the eggs, vanilla and salt; Mix well until it becomes fluffy once more.
3. Stir in flour and soda well then add oats, M&M's and toffee.
4. Bake in a 350 degree oven for 10 - 12 minutes. (Try not to burn the edges, which is easy to do because they spread somewhat awkwardly because of the extreme amount of toffee!!)
