Zucchini Bread

The summer before last my dad's garden produced an extreme amount zucchini. This led me to bake a lot of zucchini bread. Because I am bad at keeping track of my recipes (surprising, seeing as I'm extremely OCD about most stuff like that...) I am pretty sure that I used a different recipes every single time. Some were healthy, some were more like cake, others just did not go well.


This time I believe that I found one of the same recipes that I used before, and let me tell you, this was a good one. It normally calls for two loaves but for some reason my mom told me to put it in a bundt pan so I obliged and it turned out great! 


I don't know about you but whenever I see a bundt cake all I can think about is that scene from "My Big Fat Greek Wedding" when Toula's mother is confused because there is a hole in the cake that their guests bring them. She then proceeds to "fix it" by putting a vase of flowers in the middle. 


Anyway! This is the recipe that I used off of AllRecipes and I strongly advise that you try it out!
