Cinnamon Pancakes

I think I have a problem. Not the kind of problem where you are going to go sit down with your friends and talk it out. The kind of problem that is more internal, uncontrollable. I think I am a cinnamon addict. I cannot get enough of the stuff! It's just too good... too good. I don't know how anyone could possibly resist it. The smell, the taste, the warm yumminess of anything cinnamon.


So this morning since I am on break, I had the pleasure of waking up to an empty house. Perfect time to make myself a nice leisurely breakfast. I was thinking about maybe some eggs or waffles, but naturally when making my final decision, I couldn't help but go straight to pancakes. Then thinking that I wasn't really in the mood to use syrup (I know, I know, I'm weird and didn't use any on my pancakes.) I decided to throw in some cinnamon to spice 'em up a tad!! 


I used this pancake recipe, (having to make my very own buttermilk because my supplies were limited seeing as I rarely have any good ingredients on hand at my house) and then added probably about one teaspoon of cinnamon. To make buttermilk, I put one tablespoon of vinegar into one cup of fat free Lactaid milk (Yes, I am lactose intolerant, unfortunately enough) and let it sit for a little while just to let it do it's thing and become more like actual buttermilk. 


Let's just take a minute to take in all the splendor that cinnamon has to offer us. A moment of silence please.
