Maple Oatmeal Cookies

A while back I was sitting at home alone because I was done with midterms (for the most part) and did not have to be in school. Everyone was at work, and I was quite bored. I entertained the idea of taking the dog for a walk, reading, watching TV (Live! With Kelly was on) and drinking coffee, or doing something more production, such as cleaning my room or studying for my geometry exam that I had the next day. Naturally, none of those things happened.



We had some instant maple brown sugar oatmeal that I had tried for breakfast and completely detested. The taste was good, the texture was horrid. So, what was I to do with this oatmeal? Put into cookies, naturally! I added a little bit of this, a little bit of that and vua-la! A cookie! Well, more than A cookie... It actually made a lot. I would break out the big bowl for these babies. 


Last night it seemed like I was going to have a snow day today, seeing as it was coming down like gang busters, and decided to just relax and recreate these cookies! I adjusted my recipe a little bit because for one, I wasn't exactly sure how much of everything I put into the dough last time, and secondly, I wanted to make them a little bit crisper on the outside and softer on the inside. 



Ingredients:
1 stick of butter, softened
1 stick of margarine, softened
3/4 cup of sugar
3/4 cup of brown sugar, extremely packed
3 eggs
1 1/2 teaspoons of vanilla
1/3 cup of maple syrup
1 teaspoon of salt
2 3/4 cups of all-purpose flour
2 1/2 teaspoons of cinnamon
1 teaspoon of baking soda
1 teaspoon of baking powder
1 1/4 cups of old fashioned oats
1 box (8 packets) of instant maple brown sugar oatmeal


Steps:
1. Cream the butter, margarine, sugar and brown sugar.
2. Add the eggs, vanilla, maple syrup and salt.
3. Mix in the flour, cinnamon, baking soda and baking powder.
4. Stir in the oats and instant oatmeal.
5. Bake in a 375 degree oven for 11-13 minutes.
