White Chocolate Toffee Cookies



I always forget how much I love white chocolate. I mean, I REALLY LOVE white chocolate. And I ALWAYS look it over!! For what reason? I have no idea. It's delicious and elegant and brings a whole new aspect to a cookie. It kind of lightens up the flavors a bit. Anyways, you know what is especially good with white chocolate? Dunkin's coffee. I don't know what it is, but it is so gosh darn good!! 


This little nugget behind me had asked me to take her to Dunkin one day after skating and so I had gotten a coffee (because I literally survive off of coffee, I'm actually addicted, it's bad...) and then I went home to make these cookies for my friend Kelly's birthday and I was sipping on my coffee and munching on some of the white chocolate chips and OH MY GOD IT WAS HEAVEN. I highly recommend it. I really, really do. Fantastic combination. Like peanut butter and chocolate. Like chocolate and mint. Like peanut butter, chocolate and pretzels. Like pretzel and Nutella. You get the idea.


So as it turns out white chocolate and toffee bits are also a phenomenal combo, in my opinion. And this since these cookies were for my friend's birthday, I needed to throw in some color and pizzazz so naturally I turned to M&M's (the minis of course, because the work wonderfully in cookies).


Ingredients:
2 sticks unsalted butter, melted
1 cup light brown sugar
1/2 cup sugar
2 eggs
1 teaspoon salt
1 teaspoon vanilla
2 3/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
White chocolate chips
Toffee bits
 M&M's (I like to use the cute little mini ones)

Instructions:
1. Melt butter and immediately mix in brown and white sugars (the butter need not cool).
2. Add eggs, salt and vanilla.
3. Mix in flour, soda and powder.
4. Add as much of the white chocolate chips, toffee bits and M&M's as you'd like.
5. Bake at 350 degrees for approximately 12 minutes. ***


*** I just figured out that my oven is a little bit old and messed up, so my temperatures and timings may be a little off from your's, but I'm pretty sure that that is the case with all ovens. They're kind of like snowflakes. Not one is exactly like another? I don't know. This is just a warning. My oven and old and slow. But probably not as old and slow as my Aunt Patty's. She calls her oven and Easy Bake oven. That's how old and slow it is. Alright. Proceed with your everyday lives.
