Coffee Toffee Cookies



Soooo we got a new oven a little while ago and I needed to bake one last thing in my old oven sort of as a farewell. Because although my old oven was very obnoxious sometimes, I loved it. What can I say? I get attached to things. 


So we traded in this baby for a new one. This oven had brought me great memories and delicious breakfasts, lunches, dinners, snacks and desserts. 


I was meandering around the grocery store (as per the norm) and I wanted to try to find maple extract. I'm not even sure if that exists or not, but I wanted it. I wanted to make something a little special in our old oven for the last horrah. Anyways, I could not find any maple extract. Instead I found this!! 


COFFEE EXTRACT. ARE YOU KIDDING ME? IS THIS REAL LIFE?? I quickly became very excited in Stop & Shop upon coming across such a find. I had no idea that this was even a thing, let alone a thing that I could find in my very own local market. 


Coffee. Toffee. Chocolate. Where could this combination go wrong? No where. That's where. 


Basically, make your favorite chocolate chip cookie recipe, add a bag of Heath toffee bits and replace the vanilla extract with coffee extract (and add a little more, depending on how much you like coffee).
