Anyways, for her birthday I made her s'mores cookies with a Rolo in the middle and chocolate peanut butter ganache coating. Grahams, mallows, caramel, chocolate and peanut butter. What more could a girl want on her 18th birthday?
It started with this recipe, and I used a Rolo instead of a piece of chocolate.
I broke them apart and then trimmed the edges, so that they didn't look like a complete disaster, but sometimes you just have to be a hot mess. Okay, in my case, I always have to be a hot mess. I've gotten really good at it. It has become part of who I am. Actually, for a hot mess, I'm really organized... Maybe I should rethink this whole thing...
Not THIS whole thing. No no no I would never rethink this. Although, if I ever made them again, I would probably try to make them more of a whole bar and not individual cookies, but hey, this worked out okay. Because after they were baked and cooled and separated and trimmed, I coated them with this peanut butter chocolate ganache recipe and then decorated them with Reese's pieces.
Happy Birthday Becca!! Love you to the moon & back.
