Merry Christmas, Happy Holidays, Happy New Year and Happy Wednesday to everyone out there! I know I missed the boat on any holiday posts that I could have created, but that's okay. I promise you that I did, in fact, bake quite a bit this holiday season, however, none of it was photographed or blogged unfortunately. What can I say, I'm a very busy woman!
My sister, Mary, left for her semester abroad in Galway, Ireland, yesterday. She requested that before she left I make her some of our famous pumpkin bread, recipe complements of the classic Pittsburgh cookbook, The Three Rivers Cookbook. I don't know how long this book has been around, but I can tell you that we have had it my entire life and then some!
The page for this recipe is marked by a nice stain from where someone spilled pumpkin bread batter all over it. It makes it quite easy to find, as it stands out stiffly and orangely from the rest. As you can see, someone has made some adjustments to the recipe. I like to make my own adjustments, such as using the salt, adding more cinnamon, throwing in a dash of nutmeg and perhaps a teaspoon or so of pumpkin pie spice. Add whatever you'd like, obviously! I have never tried this recipe with nuts, as the rest of my family is not very nuttish. They are nutty, but not nuttish, so I leave any walnuts, almonds, peanuts, etc, out of all of my baked goods (Unless I personally want them all for myself and then I throw in some, BECAUSE I CAN!!).
It seems that I have forgotten to take pictures of the finish products, but I think you all know what a pumpkin muffin looks like. If not, then just make them and find out for yourself! Enjoy!! :)
