White Chocolate Peanut Butter Cookies


My life has changed since I found How Sweet It Is. Seriously. This blog has sooooo many different recipes and I just want to do nothing else except make them all!! Sadly, I cannot do that because I have to go to this place called "school" and do this thing called "homework" and go play "volleyball" and "skate". But other than that. I would totally be all over this blog's recipes like icing on a cake.



You wanna know what other thing has recently changed my life? Getting my license!! I have been driving myself around town all week and I have just been busy busy busy! School, skating, volleyball, friends, etc., etc., etc!! The weather has also been really extremely nice lately. I have been wanting to go outside for a run so badly, but naturally that has not happened yet. Maybe tomorrow. But probably not. We'll see.


Okay so I took this recipe from How Sweet It Is and it might be the greatest thing. Like, ever. I'm not even kidding. Or exaggerating. Yeah, I know what you're thinking... But I'm really not. It combines three of the greatest things that you can put in a cookie! Oatmeal, white chocolate chips and peanut butter. I mean... Let's get real. How could someone NOT like that?


Honestly, I figured that I could make up for not posting in a while with these cookies. Because cookies make everything better. It's just a fact of life. 


Ingredients:
1 stick of unsalted butter
6 tablespoons of White Chocolate Wonderful Peanut Butter
1 cup of light brown sugar, packed
1/2 cup of sugar
1 egg
1 egg yolk
3 teaspoons of vanilla extract
1/4 teaspoon of salt
1/2 teaspoon of baking soda
1 1/4 cups of all purpose flour
1 cup of oats
1 bag of white chocolate chips


 

Steps:
1. Melt the butter and peanut butter together completely and let cool mostly.
2. Mix in the brown sugar and sugar.
3. Add egg, egg yolk, vanilla and salt.
4. Mix in the flour and baking soda.
5. Add the oats and white chocolate chips.
6. Bake at 325 degrees Fahrenheit for about twelve minutes. 


While I was making these, my dog was going CRAZZZYYY!!! The smell of peanut butter was teasing the poor thing and I couldn't give her any because of the chocolate in the peanut butter and the cookies. I felt so bad so I took her picture, but that just made her bark more. Really I just kept making the situation worse.


This is Lizzie mid-bark. She really isn't as mean as she looks. She's just a little bit insane.
